Role Overview
The General Manager F&B (Cluster / Multi-Site) holds full operational, commercial, and leadership accountability for a portfolio of food and beverage venues within the FAB Group. This role is responsible for driving performance across multiple sites, ensuring consistent brand execution, operational excellence, financial discipline, and exceptional guest experience at scale.
Operating as a senior leader within the business, the role balances strategic oversight with hands-on leadership, supporting site-level General Managers, Restaurant Managers, and Bar Managers while acting as the key link between operations, central services, and group leadership. The General Manager F&B (Cluster) plays a critical role in scaling the business, stabilising new openings, and embedding systems, standards, and culture across the portfolio.
Key Responsibilities
1. Cluster Leadership & Operational Oversight
Provide full leadership and oversight across multiple F&B venues, ensuring consistent execution of FAB Group standards.
Set clear operational expectations for site leadership teams and hold them accountable for performance.
Ensure each venue delivers a high-quality, consistent guest experience aligned with brand positioning.
Act as the senior operational escalation point for site-level challenges, incidents, and performance risks.
Regularly review operational readiness, service quality, staffing structures, and floor execution across all sites.
Support pre-opening, soft opening, and post-opening stabilisation of new venues within the cluster.
2. Commercial Performance & Financial Accountability
Own cluster-level P&L performance, working closely with Finance to manage revenue, margins, labour, and controllable costs.
Review and challenge site-level budgets, forecasts, and performance reports.
Drive revenue optimisation through service flow, capacity management, menu performance, pricing discipline, and upselling strategies.
Monitor labour productivity and staffing efficiency across sites, ensuring alignment with trading patterns.
Identify underperformance risks early and implement corrective action plans with site leadership.
Support the development of business cases, feasibility inputs, and financial assumptions for new sites and concepts.
3. People Leadership & Talent Development
Lead, mentor, and develop General Managers, Restaurant Managers (AGM), and Bar Managers (AGM) within the cluster.
Build strong leadership benches and succession plans across all sites.
Drive performance management, coaching, and accountability at management level.
Support recruitment of senior operational roles in collaboration with HR and central services.
Embed FAB Group culture, values, and leadership behaviours consistently across the cluster.
Ensure disciplinary processes, grievances, and performance issues are handled fairly, consistently, and professionally.
4. Brand Standards, Quality & Compliance
Ensure all sites operate in full compliance with hygiene, health & safety, licensing, and regulatory requirements.
Protect brand integrity by enforcing service standards, SOPs, grooming, and guest-facing behaviours.
Ensure food, beverage, and service quality remains consistent across sites, regardless of volume or location.
Oversee audit readiness and corrective action plans following inspections or internal audits.
Maintain strong alignment between front-of-house, back-of-house, and central support functions.
5. Systems, Processes & Scale
Embed group-wide operational systems, SOPs, and reporting tools across all sites.
Ensure consistency in POS usage, reservations systems, stock controls, and reporting standards.
Support the rollout of new processes, technology, menus, and operating models across the cluster.
Work closely with central Finance, Procurement, HR, Marketing, and PMO teams to ensure smooth execution.
Continuously identify operational efficiencies and scalability opportunities across the portfolio.
6. Stakeholder & Senior Management Interface
Act as the primary operational interface between site teams and group leadership.
Provide clear, structured reporting on cluster performance, risks, and opportunities.
Support investor, landlord, and partner engagements where required.
Represent FAB Group professionally in all internal and external interactions.

Cluster revenue growth and profitability
Labour cost efficiency and margin control
Guest satisfaction scores and feedback trends
Consistency of brand and service standards across sites
Management team performance, retention, and progression
Audit, compliance, and operational risk outcomes
Successful stabilisation of new openings
Candidate Requirements
Minimum 8–10 years’ experience in senior F&B operations roles, including multi-site or cluster responsibility.
Proven track record managing complex hospitality operations at scale.
Strong commercial and financial acumen with P&L ownership experience.
Exceptional leadership and people development capability.
Deep understanding of premium casual, lifestyle, or branded hospitality environments.
Ability to operate strategically while remaining operationally grounded.
Strong communication, decision-making, and stakeholder management skills.
Flexible to travel between sites and support peak trading periods as required.
Fluent in English; additional languages are an advantage.
